For three decades, Pablo’s Mexican Restaurant has served up California-Mexican fare in a fun and casual dining environment. As a family-owned and operated establishment, Pablo’s strives to make each and every meal served at our restaurant memorable, while instilling the values and hospitality of our Hispanic roots.
Our History
Yes, there is a real Pablo. He grew up in San Diego, California where family gatherings always included great food. He and our mom, Ann, brought us to Minnesota to share those recipes with the people of our mother’s home town, Shakopee.
Since 1986 we’ve worked together as a family to establish what you see today. We continue to serve the original California Mexican recipes that our parents created and continue to carry our mom’s spirit with us since her passing in 2011.
Today, Pablo’s is in its 2nd generation of ownership with brothers Ron, wife Nicole and Ed, wife Katie along with all their children Cassandra, Zach, Sam, Nick, Vincent and Annabele who strive to continue to keep the family working to focus on providing a memorable dining experience with fresh, California-style Mexican cuisine that is not only unique to the region, but makes our customers feel like they’re part of the family.
Pablo’s also has staff who have been a vital part of the operation for many years to make our Mexican cuisine and service the best in the State. Chefs, Jason and Zach help Ron create new Mexican dishes, while dining staff Missy, Sam, Cassandra and Tamy to name a few will gladly serve up your favorite dish or Margarita.
